Ingredients

DIY Buttermilk

  • 3/4 cup milk
  • 1 tbsp lemon juice

Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/3 cup sugar
  • 1 tbsp lemon zest
  • 50 g butter soften
  • 2 tbsp powdered milk

Lemon Loaf Batter

  • 1 cup sugar
  • 1 tbsp lemon zest
  • 3 large eggs
  • 1/2 cup oil
  • 1 tsp vanilla essence
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp powdered milk

Instructions

Prepare the Buttermilk

  • Combine the milk and lemon juice. Stir well and let it sit for 5–10 minutes until slightly curdled.

Make the Streusel Topping

  • In a bowl, combine the all-purpose flour, sugar, and lemon zest. Add the softened butter and rub the mixture together until crumbly. Stir in the powdered milk, then refrigerate while preparing the batter.

Prepare the Batter

  • In a large bowl, rub the sugar and lemon zest together using your fingertips until fragrant.
  • Add the eggs and mix well. Pour in the oil, vanilla extract, and prepared buttermilk, then mix until well combined.
  • Sift together the all-purpose flour, baking powder, salt, and powdered milk. Add them to the wet ingredients and mix just until combined. Do not overmix.

Fill the Pans

  • Grease the mini loaf pans. Divide the batter evenly among the prepared pans.

Bake

  • Bake in a preheated 180°C (350°F) oven for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
