Ingredients

Brownie Batter

  • 40 g butter
  • 40 g neutral oil
  • 155 g condensed milk
  • 130 g dark compound chocolate
  • 30 g cocoa powder
  • 10 g flaxseed powder
  • 50 g water
  • 100 g all-purpose flour
  • 1 g salt

Folding In

  • 100 g dark compound chocolate chopped
  • 80 g almonds chopped

Topping

  • Extra chopped almonds

Instructions

Prepare the Brownie Batter

  • Preheat the oven to 180°C (350°F). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  • Combine the butter, oil, condensed milk, and 130 g dark compound chocolate in a microwave-safe bowl. Microwave until melted, then stir until smooth.
  • Add the cocoa powder and coffee powder. Mix until well combined, then set aside.
  • Mix the flaxseed powder and water in a separate bowl. Let it sit for 5 minutes until slightly thickened. Stir before using.
  • Add the melted chocolate mixture to the flaxseed mixture and mix until combined.
  • Add the all-purpose flour and salt. Mix just until no dry flour remains.

Add Mix-ins and Bake

  • Gently fold in the chopped dark compound chocolate and chopped almonds.
  • Pour the batter into the prepared baking pan. Insert the divider if using, then sprinkle extra chopped almonds on top.
  • Bake for 30 minutes, or until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs.

Cool and Serve

  • Let the brownies cool completely before removing from the pan, slicing, and serving.
